Waterford Organic Gaia 2.1 is the second edition of the only single malt Irish whiskey produced from local barley, this production starts from the 2016 harvest. The bottling consists mainly of first-fill bourbon casks, American and French oak casks, and natural sweet wine casks.

Peach golden color.

Complex and fruity, orange peel, breadcrumbs, brown sugar, and milk chocolate. Upon aeration, it reveals sweet fragrances of fruit salad, fig biscuits, lavender, marshmallows, and buttery notes.

The palate features white pepper, grapefruit, coconut powder, roasted peanuts with notes of lemon, cherry, and licorice. The finish has woody, malty, and spicy notes.
